UEPP 110 - Ecogastronomy: The Science and Sustainability of Food This course is an introduction to the science and sustainability of “good” food as it is produced and consumed in various social, cultural, economic, political, and physical science settings. Over the course of the quarter, we will consider gastronomic sciences that focus on taste and sensory awareness, as well as clean and just food production.
