ANTH 522 - Nutritional Anthropology Advanced study of human nutrition and metabolism from an anthropological perspective. Topics include the structure and function of the digestive system, the chemical composition of nutrients and the regulation by the body of nutrient stores and body composition. Each student will prepare a major research paper and presentation.
Prerequisites & Notes: graduate students in good standing in the anthropology department and other programs with approval of their program advisor
