UEPP 314 - Food security, policy, and practica: Special topics


Food security programs need to deliver nutrient-dense, culturally-appropriate, environmentally-sound, and cost-effective foods. This course provides a critical link from food policies, including the FDA Food Safety Modernization Act, to sustainable food practices. Practica illustrate issues in food processing to deliver safe and nutritious products, on different geographic scales. Topics vary, but the special case of cheese is highlighted, as it is a key component of USDA commodity distribution programs. It also is the nexus of many debates in food safety, food waste, and climate change. Also offered as ENVS 314.

Prerequisites & Notes: Minimum of one university-level natural science GUR; UEPP 261 or ENVS 305; or instructor permission.
