HIST 380 - Food & Environment in America One of the best windows into the values and history of a society is an examination of the food the people eat – where it comes from and how it is produced, how it is processed and marketed, and how it is prepared and consumed. This class will examine food as both the subject and the object of historical analysis, and explore the history of food in America as a way to explain larger historical forces in the American past. It will pay particular attention to the relationship of food history and environmental history, and it will introduce students to environmental history as a field of historical inquiry.
