UEPP 111 - Ecogastronomy Discussion


This course is a discussion section to the art and appreciation of “good” food to accompany ENVS 110: An Introduction to the Art and Science of Food. The class will include discussion of the regional geography of agriculture and consumption patterns, Slow Food as a social movement, gastronomic sciences that focus on taste and sensory awareness, clean and just food production and the co-optation of “sustainable” and “organic” agriculture. Also offered as ENVS 111.
